Last summer Sandy Springs
fixture Three Sheets closed to make way for a new concept from Mission + Market chef, Ian Winslade. Cleverly named Tre Vele (Italian
for Three Sheets), the focus is fresh-made pasta which is delectably displayed
in a glass-walled room right at the entrance. Ribbon after ribbon
of lovely pasta come out of that room and find their way onto your plate in the
form of cavatelli with lamb sugo, strozzapreti with vegan kale pesto and
fettuccine with wild mushrooms. The lasagna is a standout—sheet after sheet of
razor-thin spinach pasta stacked upon one another and engorged with Bolognese,
Béchamel and Grana Padano. It's a savory bomb of rich delight. The pizzas are
also delightful and save room for dessert including fresh pana cotta, tiramisu
and a decadent chocolate torte. And if you just can't get enough, step over
into their small Italian market and café, open for cappuccinos, espressos, and
fresh pastries all day, plus take home some of the same house-made pasta,
sauces, prepared meals and even the wines you enjoyed at your table.
